Raspberry Basil Bourbon Spritzers

Raspberry basil bourbon spritzers are fairly mellow and a whole lot smoother than some similarly priced varieties. To mellow out the bourbon, you can play with the amount of champagne and simple syrup. The flavors are perfectly mild, a bit of earthiness from basil, a bright note of lime and the fullness and depth of bourbon.

Total Time: 15 minutes

Ingredients

For the raspberry syrup

● 1⁄3 cup of raspberries(use fresh or frozen)

● 2 tablespoons of chopped fresh basil

● 1⁄2 cup of water

● 1⁄2 cup of sugar

For the cocktail

● 1⁄4 cup of raspberry syrup

● 1⁄4 cup of bourbon

● 1 tablespoon of lime juices

● 1⁄2 cup of champagne

Instructions

For the raspberry syrup

● Add all ingredients together in a small saucepan. Stir occasionally until sugar has dissolved and berries have softened● Remove syrup from heat and allow it to cool● Strain syrup via a fine mesh sieve into a jar when the syrup has cooled.

For the cocktail

● Combine bourbon, raspberry syrup, lime juice and a few handfuls of ice in a cocktail shaker and whisk to combine and chill the liquid● Strain out the ice and divide the bourbon mixture evenly between two champagne glasses● Top each glass with about 1⁄4 cup of champagne, pouring it slowly for the drink not to bubble over

● Top each drink with a fresh raspberry and sprig of basil

● Serve immediately

Recipe notes

● You can use a little extra syrup for a sweeter drink

● Tonic water or club soda can be used in place of champagne
